Brazilian Supperclub

Here are the reviews from the Brazilian SupperClub I co-hosted with Dhruv Baker, BBC Masterchef winner 2010 at Luiz, The London Foodie house in June 2014.  It was a PR event for Tilda, limited Brazilian rice for the worldcup 2014. Only 10 bloggers were invited to this event.
Menu was put together by me and some shopping by Dhruv. It was a team effort between Dhruv and I on the cooking at his catering kitchen in South London.
Cooking: my side was the canapes and desserts and Dhruv was the starter and mains - picanha was  barbecued to perfection!

The Menu:

Drinks

Classic caipirinha made with made with cachaça white caster sugar and lime

  Guava juice, Guarana, Amazon beer and wine


Canapes

Bolinho de Arroz  - rice fritters made with a mix of dried shrimp, white fish and chicken, served with a saffron mayonnaise  

Pao de queijo – baked Brazilian cheese bread  

Coração de Galinha - Chicken heart bbq stick* grilled and served with toasted cassava  

Empadinha – mini-pies with palm heart filling


Starters

Feijoada – mini bowls of black bean stew of Portuguese sausages calabresa and paio, sundried meat, smoked ribs and bacon

Tilda Limited Edition Brazilian Samba Rice, shredded greens, orange, toasted with cassava flour


Mains

 
Picanha with pimenta de bico, manteiga de garrafa - rump cap of beef, roasted under a blanket of rock salt and served with Brazilian chilli pepper (pimenta de bico) and drizzled with manteiga de garrafa (Brazilian clarified butter) with roasted garlic bulbs

 

Moqueca - Bahia white fish stewed in coconut milk with tomato, onion, coriander, annatto, and palm oil served with pirao de peixe – traditional accompaniment to the stew, made with fish, onions, lots herbs and broth thickened with cassava flour


Side dishes

Fried cassava and plantain

Palm heart, tomato and red onion salad

 Brigadeiro de copo

Caju sorbet – cashew fruit sorbet

Quindim egg and coconut tart


Coffee

Cereja Café -Traditional 100% Braziian coffee from a small grower outside Sao Paulo – Brazil, 100% arabica grown at high altitude. Medium roast.
