The Mexican Discovery Challenge with Benitos Hat

Back in November I was invited to take part in a food blogger’s challenge to win an artisan KitchenAid Blender. The Discovery challenge with Benito’s Hat took place at the fantastic Waitrose Cookery School. This is the kitchen of my dreams where you can cook with ten friends then someone comes and cleans all for you – perfect!

 

Upon our arrival, we were offered an expertatly prepared margerita. We were then introduced to  Ben Fordham, Benito’s Hat founder, and Felipe Fuente Cruz, the head chef  at Benito’s Hat.

The exclusive bloggers challenge was set up to showcase the tasty credentials of Mexican food. We enjoyed Felipe’s demonstration of two selected and distinctive Mexican dishes using Discovery products.

The second part of the evening was the challenge. The ten food bloggers had to use Discovery products and other fresh ingredients to create a two-course dishes in 30 minutes based on Felipe’s demo. It felt like we were at a mini masterchef show. Great fun!

Below Felipe’s dishes:
The first dish was a fresh salad of jicama ,cucumber, paprika, lemon juice, peanuts and parmesan.
The second dish,  sautee prawns served with mayonese and Discovery chipotle sauce, shredded lettuce. Simply flavoursome dish.

Ingredients:
Black beans cooked
onions diced, cumin,minced garlic
fresh coriander, tomatoes, chippotle & lime
method:
fried the onions and garlic, add the beans, coriander, chippotle, lime juice & cumin
blend all. Garnish it with chillies and coriander.

We were given a very heavy goodie bag from Discovery
Benito’s Hat dinner for two
After winning a dinner for two at Benito’s Hat for my effort in cooking the spicy black bean soup and the prawn in creamed chippotle sauce. I took my friend Fernanda to Benito’s in Covent Garden. We both agreed that the highlight of our meal were the very well made cocktails and the delectable deserts: creme caramel with cinnamon and tres leches cake – heaven!
