A little indulgence for pancake day before lent…
Two of my favorites fillings/ toppings:
Crunch walnut caramel ice cream with hot mocha sauce and
Banana and salted caramel & chocolate sauce.
For the pancake mixture

Banana and salted caramel & chocolate sauce.
For the pancake mixture
- 110gr self raising, sifted
- pinch of salt
- 2 eggs
- 200ml milk mixed with 75ml/3fl oz water
- 50gr butter
Method: blend all in a liquidizer till smooth. Let it rest in the fridge for 30 mins while you prepare the toppings and the ice cream.
Toppings:
Chocolate sauce
Ingredients:

Ingredients:
- 1 cup of cooking chocolate broken into piece
- 50 ml of single cream
Preparation:
Bring a half-filled pan with water, to simmering point, the pan should be large enough to contain a glass or another heating proof container. The pan will be placed directly on the heat, the second will contain the chocolate that needs to be melted. When the chocolate is completed melted add the cream slowly. Reserve till needed.
Mocha sauce
Ingredients:
- 1/2 cup cooking chocolate broken into pieces
- 1 tablespoon butter
- 1/4 cup hot strong black coffee
Preparation:
Combine all ingredients; blend until smooth. Keep in a warm jug till serve.
Caramel sauce
- 200 grams of soft brown sugar
- 1 tablespoon of water
- 50ml of single cream
- salted version: add 1 tsp of flaked salt
Preparation:
Place sugar and water in a bottomed heavy pan , medium heat, stir till dissolved and reduced a bit. Add the single cream stir and reserve till needed.

add cream to the caramel |
add walnut to half of the caramel sauce and cook it till the sauce is sticky |
let them cool on parchment paper |
mix the caramelized walnuts and some of the caramel sauce to the ice cream (you can either make or buy it) freeze it till needed. |
ladle the pancake batter on to a hot and lightly oiled |
fry pan, cook both sides of the pancake.
