The weather has been so extreme lately the sun is definitely here to stay, well, at least for now. To celebrate I decided to make my breakfast more fun and made some frozen yogurt sorbet.  This lovely and dead easy recipe requires only three ingredients. The smashing  people of The Collective dairy sent  a few of their  brilliantly drinks  and velvety yogurts for me to try.

Frozen yogurt sorbet recipe

 

Ingredients
500ml of yogurt, I used The Collective straight up

200ml of simple sugar syrup, find the recipe here: Syrup

1x vanilla pod

 

Method
1)   1) Prepare the simple syrup or buy already made.
2)   2) Scrape the seeds out of the vanilla pod :  Splittingthe vanilla pods and removing the seeds helps to release their flavour. With a
sharp knife, slit the vanilla pod lengthwise. Scrape the seeds out with the
knife tip.
       3)Add the seeds, yogurt and simple syrup to a food processor and mix until well incorporated
4) Place in a dish suitable for the freezer place and freeze overnight.
5) serving: take out of the fridge 5-10 minute before consumption.
For my sunshine breakfast I paired the frozen yogurt with seasonal apricots and peanuts:
