Around the world on one plate by Tim Anderson

Tim Anderson, UK masterchef winner 2011,  has created a very unusual dish called ‘ around the world on one plate’  using products by Unearthed.  Tim was born in Wisconsin, USA and this dish was inspired by the American campfire favorite, s’mores which are deliciously sweet and gooey graham cracker ‘sandwich’  with miniature marshmallows and chocolate chips ‘baked’ over campfire. Tim’s creation, around the world on one plate, is a savoury recreation of s’more using grown-up flavors and unusual ingredients combinations from Greece, Italy, Iberia, China, New Zealand, Ecuador and South Africa.  After six months of trials and experiments the final dish was unveiled at a dinner for the press and some luckily bloggers at Luiz Hara’s, aka The London Foodie, gorgeous home in North London.
We were greeted by Simon and Carrie of Unearthed, Luiz and some very flavorsome canapes prepared by Leah and Chris from Unearthed.

The star of the night:
Around the world on one plate consists in New Zeland Lamb loin wrapped with Tuscan Finocchiona salami and prosciutto, savoury cheese marshmallow served with a chocolate Port sauce and biltong twigs, made from South African biltong blended with all-bran and spices, rolled and shaped, and baked into a biscuit-like consistency. Other ingredients and flavours used in this dish and their origins:  America: maltodextrin, Britain : garlic  and general store cupboard, China: star anise, soy sauce, Ecuador: chocolate, France: olive oil, Greece – goat’s milk balls, mint; India: bay leaf, brown rice and cumin seeds. Mauritius: icing sugar. Sri Lanka – cardamom pod and Vietnam: peppercorns.
The dish was served with green and  fennel salad,  curried roasted potatoes
Tim demonstrated how to create the sauvory marshmallows and the Biltong twigs and the Port sauce. It was interesting to see the master at work.  This dish is surprisingly delicious. The side dish of roasted potatoes was very yummy too.  A feast full of flavours and textures that work well with the chocolate and Port sauce.  I want to recreate the marshmallow in my kitchen! This event showcased Unearthed products and Tim’s ability put together contrasting ingredients producing a magical meal.
The meal ended with a delightful French Pear & Almond Tart from new range of Unearthed desserts served with a scoop of Tim’s saffron ice cream and a generous portion of cherry compote.
