Who’s cooking dinner?

Rachel McCormack was cooking dinner for us last Saturday! Rachel is a friendly, vivacious, enthusiastic Scottish lady who teaches Catalan cooking in London. She lived in Spain for 7 years, mainly in the Barcelona region, where she gained knowledge in the regional cuisine. She’s an expert. The introduction to Catalan cooking was a great experience at this month’s London Cooking Club. This was my second visit at the London Cooking Club and you can read about my first visit here. This time the guests didn’t cook any of the dishes in advance, we came armed with one piece of Spanish cheese and a bottle each, that could have been either Cava, Manzanilla, Sherry Fino, Pedro Ximenez (sweet sherry – Tiffany bought a 30 years old bottle!), white and red Spanish wines.  Rachel and Luiz bought all the produce which we paid for and we took turns in cooking with Rachel. We devoured the lovely food, cooked with fresh ingredients which Rachel made sure are all available in the main supermarkets or/and local markets, making ease to reproduce them at home. The recipes are easy to follow and the star of the menu, in my opinion, were the stuffed squid with aubergines, prawns and pine nuts. Followed by the Catalan seafood rice. Spanish cheese platter : my favourite was Picos de Europa is a three-milk blue cheese from the mountains in Northern Spain that is aged for 2 months in caves. It was served with a delicious fig almond cake

    Looks insane – very very jealous! I really want to learn how to cook squid properly – the stuffed squid looks amazing!
