I met Paul Kelly and his expert crew at the Essex Food Festival back in July and last week I was invited to tour around KellyBronze organic turkey farm in Essex. I didn’t know what toexpect and I was pleasantly surprise by the experience. I learn some facts and even learn how to cook a turkey without incinerating it. Being a meat lover this day trip was right up my street!
Turkey is widely consumed around the world. However, this Christmas classic is often overlooked on the supermarket shelves, at our local butchers and markets other times of the year. This protein laden white meat is source of healthy nutrient rich food, great choice for a health diet all year round. Turkey meat, without the skin, is low in saturated fat, specially the white meat. It contains less cholesterol than other meats.
Turkey raised under organic conditions convey the most health benefits, as they offer higher nutritional value and are superior to birds given antibiotics
or raised without access to natural pasture. Consider looking for a local, outdoor reared turkey farm when shopping for organic turkeys or find a good local butcher who can source it for you.
KellyBronze turkeys are mainly breeded in Essex, but they can be found in other parts of the country too and they are exported to other countries too. This family run turkey farm is famous for it’s free range, organic birds with fantastic flavour which comes from the unique outdoor rearing and processing. KeelyBronze turkeys are humanely treated and they are less likely to contain pesticides and herbicides.

Here is a quick recipe for a marinade for turkey skewers for the barbecue or grill. Simple recipe that let the quality of the organic meat to speak for itself.
simple rosemary barbecue turkey skewers
Serves 4
Ingredients:
500gr of fresh organic turkey, in cubes 4cm x 4cm
50ml of lime juice
50ml of extra virgem olive oil
2 cloves of garlic, minced
1 desert spoon of fresh rosemary, finely chopped
1 tea spoon of grounded cumin
salt and pepper to taste
barbecue skewers soaked in water for one hour
diced vegetables of your choice.
