I was invited together with other food bloggers and journalists to dine at Matsuri St James (not longer in business). The restaurant is located in Mayfair and the menu is a combination of traditional and modern Japanese cuisine. The restaurant was funded in 1993 by the Central Japan Railway Company and Kikkoman, our host for the evening. Kikkoman is a global premium brand of naturally brewed soy sauce, together with Simon Hulstone, head chef of the Michelin starred The Elephant in Torquay, demonstrated the versatility of Kikkoman soy sauce in his dish of caramelised scallops and broccoli served with a soy based sauce: soy, mirin, olive oil and sesame oil sauce
some of Simon’s tips cooking with Kikkoman, apart from oriental dishes:
. add a few drops to stocks, it will bring out the flavour and intensify whilst reducing.
. mix Kikkoman with egg yolk before brush glazing your pastry and bread
. replace salt with Kikkoman soy sauce

I really enjoyed the evening. We were fed lots of food and information, from Kikkoman soy sauce and tasting, tips and masterclass from Simon, shushi demo and a delectable meal cooked on those sizzling hot plates which added to the theatre of the evening. Matsuri (CLOSED) is elegant and striking deco with very pleasant and knowledgeable staff. The food was excellent. I would definitely go back.
